Caviar ages faster than people expect. The grain lives for a matter of hours: the longer it waits for salting, the weaker the membrane becomes and the more the taste drifts towards fishy and bitter. That is why the processing workshop stands next to the ponds — the distance from fish to tin is measured in metres, not kilometres.
What happens on harvest day
The roe is washed, separated from the membranes and graded by hand: size, firmness, evenness of colour. Then comes the salting. We work in the classic malossol tradition: roe and salt only, with no borax, hexamine or preservatives. That shortens the shelf life, but it keeps the taste people buy caviar for.
Why the ingredient list is so short
Preservatives are needed where a long logistics chain sits between harvest and packing. A full-cycle farm does not have one: the fish is ours, the workshop is ours, and the batch is packed the same day. An own broodstock is not a matter of status — it is exactly what makes it possible not to rush the raw material and not to stretch the timeline.
How to check it
Every tin carries the harvest date and the batch number. That is the most honest way to understand what you are holding: freshness is read from the date, not from promises on the label.
